Cheeseburger Soup

1/2 Cup Butter
1/8 Cup Dried Onions
1/2 Cup or less of Flour
5 Cups Evaporated Milk
4 Cups Chicken Stock
1/2 Cups Carrots, shredded
1/2 Cups Celery, finely diced
1 lb Velveeta Log Cheese
2 Cups Sharp Cheddar Cheese
1 Cup Sour Cream
1 1/2 lb. Browned Hamburger
1 8 oz. Cream Cheese
I Pkg, Frozen shredded Hash-browns, browned and drained

Place in a large bowl, the butter, cheeses, sour cream and cream cheese. Melt in Microwave until melted. In large pot, add Chicken stock, onions, carrots, celery and cook until tender. Add the melted cheese to the pot then add 3 Cups of milk , hamburger and hash-browns. Reheat to simmer only and cook for 15 minutes.
Mix together 1 cup Flour and 1/4 cup of milk. Mix well, pour into soup mixture to thicken. You may have to do this with the rest of the flour and milk, depending on the thickness. Do not boil--milk will separate.
AS an option, you can add 1 can of tomatoes, diced.

Thank you Amy Jo Stout
