Crispy Baked Cod



This recipe can be used with any fish cod, catfish grouper, salmon, haddock, tilapia
1 Cup panko breadcrumbs
2 T chopped parsley
2 tsp grated lemon zest
1 tsp minced garlic
6/ 6oz fish fillets
1 tsp salt
2 T melted butter
Combine first 4 ingredients in a small bowl
Place fillets in a lightly greased baking dish; sprinkle evenly with salt, spoon breadcrumb mixture evenly on fillets. Drizzle evenly with the butter.
Bake @ 400 degrees for 15-17 minutes or until breadcrumbs are golden brown.
** Regular fine breadcrumbs may be substituted but the panko is best.
